Good morning everyone! I adopted an Umbraco site which has multiple translations. We recently upgraded to 12, and the client now says that after the upgrade, if she deletes something from a translation page (say from one of the french pages), it also deletes it on the other translations. I dont know Umbraco well enough to determine if this is default behaviour or something that would have changed since U7, if so, is there a way to control this?

Yea thats sounds pretty default. This is done so you can easily translate all your pages. If you create a new page for one language, it will appear unpublished in the other languages. The translated versions are 'linked' together, so you sort of have one (hidden) node with all the base properties, and then a variant for each language specific content there is. So if you deleted the node entirely, the variants are gone aswell. Better to just unpublish it if you want to remove it from a single language.
