I want to use the Umbraco forms workflow to configure email adresses to send the forms data to. I use Umbraco in headless mode and retrieve the date from the Content Delivery API. There is no problem getting the form fields from the API, however the workflow data is missing. Is there any way/API which can deliver i.e. the email adresses from the workflow?

Is it not intended that you "just" submit the entry/record to Umbraco and that it processes the workflows? En that it handles mailing if that is a workflow. So I guess (assumption) making workflows available through the API is not really a thing?
